- 4 tomatoes peeled and sliced 
- 10 basil leaves, julienned 
- 1/2 cup chopped green onion 
- 1 pie shell
- 1 cup shredded mozzarella 
- 1 cup shredded cheddar 
- 1 cup mayo (I use only Dukes. It has no sugar)
- Salt and pepper to taste


1. Preheat oven to 350.

2. Spread tomatoes in a colander, adding salt to taste, and drain for several minutes.

3. Place tomatoes, basil and onion in the thawed pie shell. Season with salt and pepper.

4. Mix the mayonnaise and cheeses together and then spread it on top of the tomatoes. Use an offset spatula for best results, making sure to spread it to the edges of the pie.

5. Bake for 30 minutes or until lightly browned on top. Let it rest for 10-15 minutes before serving.
