COLONTOWN is an online community for colorectal cancer patients and caregivers. COLONTOWN brings connection, hope, and information to more than 8000 members in 120 groups focused on every aspect of the cancer experience. Each group is managed by a trained volunteer patient or caregiver admin to ensure a safe, respectful and supportive space for all. COLONTOWN is a program of the nonprofit PALTOWN, which also offers colorectal cancer education about everything from the first day of diagnosis to finding clinical trial options, all created by patients and caregivers.

HE SAYS TOMATO, SHE SAYS TOMATA – I SAY DELISH

Hello, I am Daisy Peach, and I am OBSESSED WITH TOMATOES. They are the fruit of the gods! Those perfectly ripe summer tomatoes....no words. Just...DELISH! Oh my goodness they are amazing and so versatile...salsas, sandwiches, plain, burgers...so many options. SO. MANY. OPTIONS.
Did you know.... tomatoes are Tennessee’s state fruit???? I did! There are so may awesome thing to do with tomatoes....so let me share!
About five minutes from our house is an amazing roadside market that sells the freshest produce and candy like tomatoes. I remember going into the market years ago ready to buy heirloom tomatoes. The owner said “ma’am, try our Pink Lady tomatoes instead. If you don’t like it, I will give you some heirloom tomatoes for free”. I took his advice and never went back. All you need is a little salt and it is the perfect side dish or snack.
Oh tomatoes, how do I love thee, let me count the ways!!!! Ok, let’s chat about the million ways I love to eat tomatoes
Cucumber Tomato Salad
If there could ever be a dish that describes me.... this is it!!!! It is super simple. Chop up a fresh cucumber, a juicy tomato and a red onion...then add some olive oil, red wine vinegar, dill, salt and pepper and if you are feeling crazy...a little feta (because feta makes everything better!!!!). Let it sit in the fridge for an hour or two and this is the best thing EVER!!!! I mean seriously!!! It might be my lifeline in the summer! Just sayin’!
If you are a southerner, you have had this. It is so simple, yet so delectable. Take two pieces of really good white bread, cut a thick slice of tomato, top it with salt and pepper and a giant dollop of mayo. That right there friend is an amazing meal! If you want to get crazy...add some bacon. Oh my goodness this is a delectable treat. I like to toast the bread too sometimes, to stand up to the tomato. It will not disappoint. Try it – I promise you will be a convert.
My amazing mother-in-law introduced me to tomato pie. (You will hear more about her, she is my lifeline and keeps me sane...oh and she is an AMAZING COOK!!!!! Get excited!!!!). Anyway, she made this delectable treat for us many years back and it quickly became a staple on our weekly menu. Want my mother in law’s recipe? Check out the recipe section. You will quickly make this part of your regular rotation...i promise!
So, this tomato journey is not even beginning. There will be so many more entries on this topic...so get ready. If I can leave you with one piece of advice...when in doubt...add tomatoes.
