Perfect Filet w/ Herbed Steak Butter - A Daisy Peach Original!

Ingredients
- Three 8 oz. filets – No bacon
- ¾ of a stick of salted butter
- Salt and Pepper
- Olive Oil
- Granulated Garlic
- Chives
- Montreal Steak Seasoning
Directions
Steak Butter
The butter can be made days before you need it
- Take ½ a stick of butter and soften (I pop mine in the microwave for about 5-7 seconds).
- In a bowl combine the butter and (to taste) salt, pepper and chives, granulated garlic and Montreal Steak Seasoning. Get creative with your herbs and seasoning. Anything you like…you can add it!!
- Create a log of the butter in plastic wrap and cool in the fridge until ready to use.
Steaks
- Bring steaks to room temperature – About 30 minutes sitting on your counter
- Coat the bottom of an oven ready skillet (one you can use on the stove and the oven) on high.
- While heated, season one side of the filet with (to taste) salt, pepper, granulated garlic and Montreal Steak Seasoning
- Once the skillet is heated, place seasoned size down.
- Let seer for around 2 minutes. Be careful to not burn but you want the crust.
- While searing, season the other side.
- When a nice crust forms, flip the filets, put the other ¼ stick of butter in the skillet (divided) and immediately put the entire skillet into a 375 degree oven.
- We like ours medium rare so we usually cook ours for about 9 minutes in the oven.
- USE A MEAT THERMOMETER.
- Medium rare should read about 140 degrees internally
- When they reach your desired temp, remove the skillet from the oven (THE HANDLE IS HOT!!!!)
- Remove the steaks from the skillet and place on a clean plate.
- Put a pat of steak butter on the top of each filet and cover the plate with aluminum foil
- Let rest for 6-8 minutes
